Dairy Free, Avocado Egg Salad Dip

I love this Dairy Free, Avocado Egg Salad Dip plain, or with some fresh vegetables. This recipe is also gluten free and packed with nutrients! Eggs are a protein source that work well with my system, however, I know many people can be allergic. So, if you are one of those people, simply replace eggs with veggies, or another cooked protein source. This recipe has lots of healthy fats and proteins, to make it a filling snack, or side dish. It is also super versatile! You can spread it on bread for a sandwich, put in a bowl and eat with a fork, or use it as a dip with your favorite crunchy vegetables/crackers. I love using avocados in recipes, not only for the awesome fats and nutrients, but because avocados take on the flavors around it. Avocado Egg Salad Dip, Gluten Free, Dairy Free, Omega 3, Omega 6, Healthy Fats, Protein, Avocado Recipes, Hemp Seeds, Vegetable Dip, Allergy Friendly Recipes

Ingredients 

  • 6 hard boiled eggs (peeled)
  • 2 ripe avocados (small size, peeled, remove pits)…no bruises or stringy parts
  • 1/4 cup avocado oil mayonnaise (Primal Kitchen Avocado Oil Mayonnaise)
  • 1 Tablespoon hemp hearts (shelled hemp seeds)
  • 1/4 -1/2 teaspoon salt (start with 1/4 tsp and see if you prefer more)
  • veggies of your choice, as an optional topping
  • extra hemp hearts, as an optional topping

Instructions

  1. Put the hard boiled eggs into a medium-sized bowl and mash until desired texture.
  2. Add remaining ingredients into same bowl, except the optional toppings. Remember to start with only 1/4 tsp salt…add more later, if needed.
  3. Mash together until well blended.
  4. Taste to see if you need more salt. If you need more, add up to another 1/4 tsp. Mix well.
  5. This will make several servings, depending on your desired portion size. 
  6. Put your desired portion into a small bowl, with toppings of your choice, or use it in a sandwich, or as a dip.
  7. Refrigerate the remaining amount in a covered dish. The avocado may turn slightly dark, the longer it is in the refrigerator due to oxygen exposure, however, it will still be good for about 4 days.
