Gluten Free and Dairy Free, Chocolate Chips and Golden Raisins Cookies

Chocolate Chips Golden Raisins Cookies Gluten Free Dairy Free Healthy Dessert Coconut Flour Almond Flour Cinnamon marlowsgiftcottage

Ingredients:

*1 1/2 teaspoons cinnamon

* 1 1/2 cups super fine almond flour gluten free

* 1/4 cup coconut flour gluten free (sifted)

* 1 teaspoon baking soda gluten free

* 1/4 teaspoon salt

* 2 eggs

* 1/2 cup coconut butter, melted

* 1/3 cup pure maple syrup (gluten free)

* 1 teaspoon organic lemon peel

* 1/2 cup golden raisins

* 1/3 cup Dairy Free/Gluten Free Dark Chocolate Chips Guittard Sante 72% dark chocolate made with coconut sugar

* 1 teaspoon pure vanilla extract gluten free

Instructions:

  1. Preheat oven to 350 degrees F. In a medium mixing bowl (bowl #1), combine cinnamon, almond flour, coconut flour, baking soda, and salt.
  2. In another medium mixing bowl (bowl #2), combine eggs, coconut butter, pure maple syrup, lemon peel, golden raisins, chocolate chips, and pure vanilla extract.
  3. Slowly mix together the ingredients from bowl #1 into bowl #2.
  4. Scoop out cookie dough (makes approximately 21 cookies) and place onto a cookie sheet (I love using silicone sheet liners to make cleaning up a breeze).
  5. Bake for approximately 16 minutes (all ovens, and altitudes, are different).
  6. Remove cookies from sheet and place on a cooling cookie rack. Once cooled, place in an airtight container. These can be frozen for up to a year.
