Healthy, Candied Autumn Pecans Recipe

This Healthy, Candied Autumn Pecans recipe is a great, allergy-friendly snack! It is also dairy-free, vegan, gluten-free, and packed with healthy fats and low glycemic natural sweetness! This is a great little treat if you like something with a little crunch, a little salt, and a little sweet.  This is one of my favorite recipes to have ready to snack on when I need a bit of energy!  Enjoy!!

Ingredients for the Healthy, Candied Autumn Pecans

Instructions

  • Turn oven on to 325 degrees.
  • Set aside 2 baking sheets with parchment paper (one will be used for baking and the other one will be used after for cooling).
  • In a small bowl, combine coconut sugar, salt, ground ginger, and ground cinnamon.  Mix together and set aside for after baking.

  • Combine pure maple syrup, melted coconut oil, and water in a large saucepan.
  • Bring to a boil over high heat (this will happen very quickly, 1-2 minutes, stir constantly), REDUCE heat to medium after boiling begins.
  • Add raw pecans to large saucepan right after reducing heat and mix the pecans completely with the heated liquids (should just take a minute or two).
  • Pour everything out of the large saucepan onto ONE baking sheet that was covered with parchment paper.
  • Spread evenly across the parchment paper/baking sheet.

  • Place baking sheet in oven at 325 degrees for approximately 12-13 minutes.
  • When there are approximately 6 minutes left, stir/turn over pecans, then continue baking.
  • Once the 12-13 minute total baking time is complete, take baking sheet out of oven and place on the top of the stove, or a heat safe location.
  • Transfer the pecans to a large bowl, add the coconut sugar mixture, and stir until pecans are well covered.
  • Pour and spread evenly over the second parchment paper covered baking sheet to cool.
  • Store in an air tight container.
